The Crozes-Hermitage appellation is much larger are Hermitage and covers a large area on the east bank of the river, north and south of the town of Tain L'Hermitage. The area north of the town of Tain L'Hermitage benefits from a favourable mesoclimate and heat-retaining granite rock under predominantly clay-limestone soils.

Here, Guillaume produces richer, more complex wines than those from the flatter areas to the south, where alluvial soils are more prevalent. None of these vineyards benefit from the higher altitude or sunshine hours that the more southerly hills to the north do.

Guillaume's white wines are as interesting and profound as his reds. Sorrel's white Crozes come from 60-year-old vines from Larnage, on kaolin-rich soils. Each year he produces only a few barrels of white Crozes as 15 hectolitres per hectare. In the nose, notes of grilled pineapple and toast. On the palate ripe, rich and round with a velvety texture and long finish.
