This Chablis originates from the lieu-dit Les Rosettes, located between the villages of Préhy and Courgis, southwest of Chablis. The vineyard is planted on the region's characteristic Kimmeridgian limestone and marl soils, rich in fossilised shells, which give the wine its distinctive minerality, tension, and finesse. Thanks to its favourable exposure, the grapes achieve optimal ripeness, while the cool nights preserve vibrant acidity and aromatic precision. The vineyard is farmed organically, although it is not certified. The combination of limestone-rich soils and Chablis' cool climate results in a wine with a pronounced expression of terroir.
After harvest, the grapes are traditionally vinified. Approximately 33% of the wine is aged in used oak barrels, while the remainder matures in stainless steel tanks. This combination preserves the fresh, mineral style of Chablis while adding depth, texture, and subtle notes of toast and almond, without overshadowing the wine's pure fruit expression.
