This wine comes from the tiny parcel Paquier des Chênes in Morey-Saint-Denis, covering just 0.09 hectares and planted exclusively with 100% Chardonnay. The vines were planted in 1999 and grow on the characteristic marly and limestone soils of Morey-Saint-Denis, giving the wine its own distinct and singular personality.
The vineyard is managed according to integrated pest management practices combined with non-certified biodynamic cultivation. After careful green harvesting, the grapes are hand-picked. Winemaking begins with the pressing of whole clusters, followed by a cold pre-fermentation maceration. Alcoholic fermentation takes place in stainless steel vatsand lasts approximately fifteen days.
The wine is also matured in stainless steel tanks in order to preserve freshness and fruit purity. In the glass, it reveals intense aromas of exotic fruits and white-fleshed fruits, complemented by elegant floral notes. The palate is well balanced, round and fruit-driven, offering a clean, vibrant and expressive profile.
