This wine comes from Aux Cheseaux in Morey-Saint-Denis, sourced from a small 0.15-hectare parcel planted in 1926 and 1979 and entirely devoted to 100% Pinot Noir. The terroir benefits from an oceanic climate with semi-continental influences, combined with limestone and marly soils. The name Les Cheseaux derives from the Latin word casale, used during the Gallo-Roman era, referring to ancient building sites where stone remains were found — a historical imprint that adds depth to this distinctive climat.
Vineyard management follows integrated pest management practices alongside non-certified biodynamic cultivation. After careful green harvesting, the grapes are hand-picked. Winemaking begins with a cold pre-fermentation maceration, using either destemmed grapes or whole clusters depending on the character of the vintage. The vatting period lasts around fifteen days.
The wine is then aged for 12 to 14 months in oak barrels, with 30% new oak, enhancing structure and elegance while preserving purity of expression. In the glass, it displays a deep garnet-red colour and reveals a complex bouquet of red fruits such as strawberry, raspberry and cherry, complemented by spicy nuances driven by the wine’s pronounced minerality
