Saint-Aubin lies right next to Montrachet, nestled between Chassagne and Puligny, in the southern part of the Côte de Beaune – the heartland of great white Burgundy wines. The vineyards are planted with Chardonnay on white clay soils with a high limestone content. The slopes are steep in places and face east to south-east, at altitudes between 300 and 350 metres.
To the west of ‘En Remilly’ lies the climat La Chatenière, tucked away in a north-east-facing basin that benefits from refreshing northerly winds. Saint-Aubin thus embodies, as it were, the character of cool sunlight: bright, fresh and refined.
In its youth, the wine displays aromas of white flowers, flint, green almond and orange blossom. With age, it develops richer notes of beeswax, honey, marzipan, amber and cinnamon. The wine is crisp and refined on the palate, with a slight tension, but gains roundness and fullness as it matures. A wine with class and depth, in which elegance and character are beautifully balanced.
