Productinformation
Millésime 2019 is a distinctive vintage Champagne in which Bonnet-Ponson combines the character of an excellent harvest with the expression of its finest vineyard parcels. The blend consists of 40% Pinot Noir, 40% Chardonnay and 20% Meunier, sourced from carefully selected plots in Chamery, Verzenay, Vrigny and Coulommes-la-Montagne. Only the heart of the pressing is used for this cuvée, yielding the most refined juice and forming the foundation for a Champagne of exceptional precision, depth and elegance.
The vinification reflects the estate's natural and minimalist philosophy. Primary fermentation takes place in 400-litre oak barrels, using exclusively indigenous yeasts sourced from the estate's own vineyards. The wine is vinified entirely without the addition of sulphites and undergoes neither fining nor filtration. Following complete malolactic fermentation, it spends nine months ageing on its fine lees before bottling. The Champagne then matures under cork, allowing for a gradual and refined development. With a dosage of 0 g/l, the character of the vintage and terroir remains fully expressed.
The result is a rich and layered Champagne, bringing together ripe stone fruit, citrus and subtle notes of brioche and toasted nuts. Pinot Noir provides structure and power, while Chardonnay contributes freshness, precision and mineral tension. Meunier adds a pleasant roundness and approachability. Despite its depth, the wine retains remarkable vibrancy, with a refined mousse and a long, delicately saline finish. A distinctly gastronomic Champagne in which ripeness, complexity and elegance are beautifully balanced.
