En Servy is a small vineyard (0.2ha) that you encounter just before entering the village of Solutré-Pouilly, from the Davayé side. The premier cru plots are found mainly near the hamlet of Les Gerbeaux. The vines were planted in 1971 on a steep south-facing slope full of stony marl from the imposing Roche de Solutré that towers above the vineyard.
The vineyard lies at =/- 325 meters altitude and is enclosed by walls! This together with its southern orientation makes it a (very) warm terroir.
The harvest began on 9/9/2023, the wine is spontaneously fermented in traditional 228-litre Bourgogne barrels, 1/3 of which are new barrels and 1/3 of which are barrels that have only been used once. The wine undergoes full malolactic fermentation and matures for a further 11 months in barrels on lees. Blending in stainless steel, followed by further maturation on fine lees for 2 months before bottling.
The very warm microclimate of this plot gives the wine a brilliant golden colour. The nose is powerful, with aromas of stewed stone fruit, yellow and white flowers, toasted brioche and melted butter. The palate is rich, full and silky, with a lovely aromatic freshness and perfect balance.
Of this organic wine only 900 bottles have been produced.
