This wine comes from Les Cazetiers, widely regarded as one of the three finest Premier Cru climats of Gevrey-Chambertin, and is produced exclusively from 100% Pinot Noir, sourced from vines averaging around 45 years of age. The vineyard faces southeast and benefits from an oceanic climate with semi-continental influences. The soils are composed of white marls and limestone sedimentary deposits, providing power, tension and aromatic depth.
Vineyard management follows integrated pest management practices combined with non-certified biodynamic cultivation. After careful green harvesting, the grapes are hand-picked. Winemaking begins with a cold pre-fermentation maceration, using either destemmed grapes or whole clusters, depending on the character of the vintage. The total vatting period lasts approximately fifteen days.
The wine is then matured for 12 to 14 months in oak barrels, with 30% new oak, adding structure and complexity while preserving the expression of the terroir. In the glass, this Les Cazetiers reveals itself as a rich and complex wine with a powerful nose expressing notes of cherry and roasted nuances. On the palate, a frank and velvety attack leads to a broad aromatic spectrum dominated by spicy notes, notably nutmeg. The structure is silky, and the finish is marked by an impressive persistence.
