The 2.25 hectares of vineyards are located at the top of the Moulin-à-Vent hill, about 50 meters from the windmill itself. The vines are old, planted between 1920 and 1945. What makes this terroir unique is the combination of pink granite soils and exposure to the cold northern winds, giving this cuvée a beautiful freshness.
The grapes are harvested by hand, with 40% whole bunches. Fermentation lasts 3 weeks in open vats with very gentle extraction. The wine is aged in barrels for a period of 15 months. 100% Gamay!
Aromas of rose petals with plenty of black fruit and soft spices, showing a refined and elegant character. Thanks to the old vines, this wine is powerful yet elegant, approachable in its youth and gaining complexity over time.
